The hunting window shows us all the mobs and the resources in the area. If a mob is currently in a fight, you'll see a symbol - a yellow circle with the letter "i" in it - to indicate that. Also a mob doesn't move when it's in a fight, so basically attacking anything that's walking around and doesn't have a yellow circle above its head is fine
And if you happen to attack a mob that's already in a fight, a pop-up window tells you that the mob is currently in a fight and asks for your confirmation to join the fight, so accidentally joining in a battle is not possible
As for resources, such as plants, fish and stones, a small circle above it shows how many people are trying to obtain it at that time. And if you are the first to start gathering it, the loading bar should say "You started gathering the resources first" (or something close to that, I don't remember the exact sentence) and that's how you know if you're "stealing" some other people's loot.
So in short, a small yellow circle is what we are looking for in both cases

In the hunting screen, you can see all the monsters in this area. If a monster is already in fight, you'll see a yellow on it. Don't attack such monsters, you won't join other players' fights.
But when your connection speed is low or you and other player start the fight at almost the same time, you don't see the yellow exclamation mark. In such situation, you'll get a notification to tell you "You are trying to attack a monster that is already in combat. Continue?", you can choose cancel to avoid joining others' fight. In this way, you'll never join other players fights by accident.
BTW, you can disable the alert function in personal under character tab. There's an entry: Do not check hunting monster activity, check that box, the alert function will be disabled, you''ll start the fight directly. It's unchecked at the beginning, so choose it wisely .

A lot of people try to avoid joining other players fights with mobs.
There are a lot of reasons for this:
-Not to waste time
-Not to still loot
-Not to waste blesses etc.
But how can you be sure you won't join such battle?
1. First of all, in hunting screen you see a lot of monsters and you know the mob is in fight with other player when you see mark over him. SO DON'T ATTACK IT
2. Secondly, there is an option (Character -> Personal) " Do not check hunting monster activity " When you have the box unchecked you will be given a possibility to confirm enterning the fight when the mob is taken or to cancel action. If it is checked you won't get any notification about joining fight.
3. I recommend not using "completed battles" tab under "fights" menu to start fight, as you won't be given any notification as well.
To sum up, it is really tough to accidently join others fight
